Ortlieb panniers are a big favourite for me - the simple no-fuss design, the totally waterproof glued seams, and the simple roll-top closure make them much more useful than more showy but less tough panniers.
Ortlieb panniers are made in two types - Classic and Plus - with the same design for each. Classic panniers are made from PVC-laminated gloss fabric and have the simple QL1 hook system, whereas the Plus panniers are made from Nylon-laminated matt fabric (lighter and tougher) and have the multi-adjustable QL2 hooks. They also have extra storage pockets.
Back Roller 
The simplest design - a totally waterproof bag with a roll-top closure, and a clip-in organiser pocket on the Plus version. 40 litres per pair.
Front Roller
As above, but for the front. 25 litres per pair.
Bike Packer
Similar to the Back roller, but with an additional fold-over flap and external mesh pocket on the Plus version. 40 litres per pair.
Sport Packer
As above, but in a smaller front version. 30 litres per pair.
